This is a salad that
you can make in a few minutes. I
have become a little daring when I try out a new recipe on family and friends,
either that, or I am nuts, bringing this to my Geneva family reunion. I
absolutely love this salad. The calorie count is extremely low, but the flavor
is amazingly high. I am not a big salad eater, but I must say that I could eat
this salad every day. The mix of apples, pecans and blue cheese is outstanding,
but the dressing is what ties the entire thing together. My Mom said she would have liked a little more dressing. This is a salad to make weekly. Jenny, this might be a new favorite for
you – my salad-eating friend.
Why Weight?
Another
good week! I must say that I
didn’t expect to lose 11 pounds in two weeks, but I know from past experience
that it will slow down to a pound or two pretty soon. I wish it would just all fall off, but being realistic, I
know I have to be consistent and keep doing what I know works for me.

Random Reflections - Bucket List
One
of the things I haven’t done in a long time is create clothing. I would like to
purchase a dress form and begin creating clothing again. I used to make clothes
for my nieces and nephews when they were younger and I really enjoyed doing
this for them. I love the show Project Runway, and I would like to try my hand
at creating again. This could be
really fun.

In
June, I have an appointment to see Dr. King, my eye doctor. I have been having
some trouble with my night vision and seeing distances clearly. After talking
to my sister, Kim, I want to investigate contacts to correct vision all of my
vision, both near, far, and night. I can’t imagine what it will be like to see
everything clearly, again. This is
a trip to the doctor I can’t wait to experience. Who thought I would ever say
that??? Follow-up: I went to see Dr. King and my vision is great. He said to come back to see him in two years - go figure!
