Butternut Squash with Pine Nuts and

The name of this one alone, shut me down on
this recipe. The only part that would appeal to me is the Parmesan.
I
read up on this a little and I learned that this squash is low in fat and high
in fiber. It is also high in Vitamins A, C and E. That sounds great for the body. The grocer told me that it
is great in potassium, too.
It’s
sad that it isn’t helping me because of my pickiness!
Random Reflections
As
I was returning home one day and driving by Mooseheart, I saw a man
photographing the Eagles. His photos are amazing and clear, while mine are not
of the best quality. I asked him if I could use his pictures and he agreed, but
I can’t post them because I didn’t get written permission, so I am just sharing
the photos that I took of the baby Eaglets. It was amazing to see (but not
photograph) one of the adults and the three youngsters. I drove by yesterday and saw no sign of
life. I bet the babies have flown the coop (I always wanted to say that).

My Gorgeous Girls
Willow
loves to walk through the garden and smell the flowers. I was taking pictures
of the flowers and grasses for this blog, when once again, Willow appears in
the shot. She’s too funny.
