Basil Shrimp Risotto

This is one of the most
refreshing dinners I have had this summer. I don’t think I have ever had
risotto before and I am definitely a convert.
I
only had one pound of shrimp and the recipe called for 1.5 pounds. Next time, I
will put in two entire pounds. I love shrimp and since it is lower in calories,
it will be a great addition to my menus.
The
lemon and basil add so much to the dish. Of course, you probably noticed that
there is a little heavy cream – but it wouldn’t be a Ree masterpiece without
it. I just love her recipes. I wish I knew how to actually contact her.
Fabulous “Family and Friends” Food
Gooey Cake
Ingredients:
1 box German
chocolate cake mix
1 (14 oz.) can
sweetened condensed ilk
1 (12 oz. jar of
caramel topping
1 cup Cool Whip
3 Heath candy bars
Directions:
Prepare
cake according to directions on back of box. Use a 9 x 13 pan. When cooked, and
while still warm, poke holes ½ inch apart with handle of a wooden spoon. Pour
sweetened condensed milk into holes. Next, pour on caramel topping.
Refrigerate. Once cool, top with
Cool Whip and crushed candy bars.
Refrigerate overnight.
This
one was in my recipe box with no name on it. I love the idea of eating a giant piece of this but I am sure it has boo coo calories so it is best to just read it and dream.
