I am so surprised
how much I love these pancakes. Making the faces was downright fun, even though
I made a disaster of the B, which was my first attempt at this new skill. The
pancakes were light and not overdone. The taste was subtle, which was important
to me. I did add syrup because that’s the way I roll.
I also took some
over to the Serpico and Nicole, Gianna, Marisa and Michael all liked them. I am
sure Nicole and I will be making them in the future.

Crust
Ingredients:
2/3 cups margarine
½ cup granulated
sugar
2 cups flour
Crust
Directions:
Beat
margarine with electric mixer on high for 30 seconds. Add sugar, beat until
combined. Beat in flour until crumbly.
Press into a 9 x 13 inch pan. Bake at 350 degrees for 15 – 18 minutes.
Filling
Ingredients:
4 eggs
¾ cup granulated
sugar
4 Tblsp. flour
6 Tblsp. lemon
juice
½ teasp, baking
powder
Top with powdered
sugar
Filling
Directions:
Combine
filling ingredients and beat for 2 minutes. Pour over crust. Bake for 20 minutes at 350
degrees.
Cook
on a wire rack. Sift powdered
sugar on top when cool. Cut into
bars.
