Recipe Review
Today’s
Recipe and Location: Pumpkin
Pie and Perfect Pie Crust

I figured out that there are
477 calories per serving, if 12 servings are made. (Please note that the calorie
counts vary depending on the specific brands of ingredients that you choose to
use.)
These are the pie crusts I was defrosting. You can make them ahead and pies take less time. |
I wrapped the crust in foil to keep it from becoming too dark. |
It was so gosh darn yummy! |
Here are the two pies I made to take to my Mom's house last week. |
This is a wonderful
pie. I have always loved pumpkin pie and this one is no exception. The crust is
absolutely amazing. I have made many pies using this recipe and they have all
been a hit! Try this one for your
Thanksgiving dessert.
Random Reflections - Bucket List
One
of the things I would like to do after I retire is to spend a day in all of the
nearby cities and investigate what is there to do. This area has grown so much,
and not being a shopper, I don’t even know what shops and restaurants are in
the area. I think it would also make a great blog weekly entry.

Why Weight?
This was a good
week. I went to Curves on four days and spent some time with my family on
Thursday. My Mom made the most wonderful lasagna. I had to estimate my calories
because I have no idea how many were in the dinner. I was fortunate that Mom
let me bring a pumpkin and caramel apple pie. I love knocking out two recipes
in one night.

Wants and Wishes
I
want to finish this school year feeling like I did the best job teaching ever.
I am really enjoying every day. I am not counting down or focusing on the
future but just living in the moment. I can’t believe the school year is
already a third over. I knew this last year would go quickly, but it is a
little shocking.
