Apple-Walnut
Pound Cake

Ingredients:
2 cups sugar
1.5 cups Canola Oil
3 eggs
3 cups white flour
1 teasp. baking soda
1 teasp. salt
1 1/2 teasp. cinnamon
1 Tablsp. vanilla extract
1 large Gala apple
1 large McIntosh apple
1 large Honey Crisp apple
1 1/3 cup walnuts
1 ¼ cups coconut
Directions:
Preheat oven to 350 degrees. Grease and flour a
10-inch tube or Bundt pan.
In
a large mixing bowl, whisk together the sugar, oil, and eggs until well blended
and yellowish in color. Set aside.
Sift
together the dry ingredients: flour, cinnamon, baking soda, and salt. Add the
flour mixture and vanilla to the wet ingredients. The mixture will be very
thick.
Fold
in the apples, walnuts, and coconut. Pour
or spoon the batter into the tube or Bundt pan.
Bake
for 1 hour and 20 minutes.
Let
cool in the pan for 20 minutes before turning out onto the cake plate. Serves 16 to 20 people.
First, I buttered and floured the Bundt pan.
Dry ingredients were sifted together
Eggs, Canola, and sugar were whisked together next.
I removed the peel and cores from the three types of apples
A blurry 4 cups of mixed apples
I then added the vanilla
Lastly, I added the apples, walnuts, and coconut
I used a spoon to put it in the Bundt Pan
to keep it off of the sides of the pan.
I left it in the pan for 20 min. to cool
before flipping it over on the plate
I think the rounded edged Bundt pans
are prettier than this square pan
This is one heck of a fabulous cake.
It was moist and wonderful.

I was driving down Kirk Road and glanced to my right at the Trellis store. I had to go back, and take a picture of the dog made of straw. This is so cool! How do you make something like this dog? |
