What the Beck???

Recipe Review

Today’s Recipe and Location: Pesto, Roasted Red Pepper and Mozzarella Flatbread
Found in: The Pioneer Woman blog

I figured out that there are 570 calories, if 1 serving is made. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

I can’t believe I am writing this – but I loved this “flatbread pizza-like concoction. There was a time in my life that I would never have eaten a roasted red pepper. Ree Drummond has changed so much about what I love to eat, now. I think she adds an awful lot of pesto, which I would cut down on when I make this again. I would have liked the cheese to be grated so it covered the pizza. I also did not cook mine nearly long enough. I left the recipe and photo in the workroom, and was too darn tired to go over there and get it, so mine was undercooked compared to Ree’s, however, undercooked or not, it was fabulous!

These are the ingredients that I used to create this recipe.
Ree called for Naan flatbread, but my local stores do not
carry it, so I used the Flatout Multigrain brand.
After I had used these ingredients, I found the Naan
bread which was much better for this recipe.  See below.

Here is my flatbread....Ree's type poofs up like pizza dough

I started by spooning on the pesto

Pesto is made with olive oil,  so in my opinion,
this is way too much pesto because it turned
oily after it was cooked. I loved the flavor, so
I would take off the chunks or thick areas only.

 On went the mozzarella slices.
I bought the pre-sliced type.

I would also add more peppers next time.

The bottom was a little crunchy.  YUM!!
You can see the standing oil - that's what
I was talkin' about.

Now that I found the Naan bread, I tried a pizza
with pepperoni instead of roasted red peppers.

I cut it in half before cooking,
and baked it at 400 degrees for 9 minutes.
The cheese melted much better by leaving it in longer.

My next try was with pepperoni and black olives - my
absolute favorite way to eat a pizza.
I loved the Naan bread!!!!
Three words explain it all...

TO DIE FOR!!!!

  1. I loved the taste as well but it was too fatty for me. Loved the taste but after some time my belly did not feel good-- I think it was the fat😫
