What the Beck???

I recently finished this soft yellow blanket. I love it!



Up close and personal. This is just like the blue
one I recently finished a few weeks ago.

     These were quite good. I love a baked potato whenever I have a steak, which is now rare. I think that I love potatoes in any form. This was a joy to eat. Too bad I didn’t have a thick, juicy steak to eat with this tater.



I began by baking a russet potato.



I made thin slices in the baked potato
making sure that the cuts didn't go all of the way 
through to the plate.



I poured some of the butter into the crevices.


I also poured some olive oil.



Chives really make the dish.



Salt and pepper are definitely needed for flavor.



It is now ready to eat.

Recipe Review

Today’s Recipe and Location: Easy Green Chilie Enchiladas

I figured out that there are 158 calories, if 12 servings are made. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)


         These were very tasty enchiladas. I actually prefer flour tortillas, because the corn flavor seems to overpower the rich flavors of the ingredients. These were a quick meal and quite good.



I began by heating the green enchilada sauce.


As it began heating, I added in the green chilies.


In a skillet, I cooked the onions and butter.



I only had red onions so that it what I used.



I took three tortillas and covered them with the 
Cheddar-Jack. This is what Ree did, but I would 
usually just do one at a time.


After the cheese was melted I spooned on some of the 
green chili and enchilada sauces.



I also added some of the butter/onion mixture.



What enchilada is complete with sour cream?


The final ingredient was to add fresh cilantro leaves.

Today’s Recipe and Location: Hot Hawaiian Beef Sandwiches

I figured out that there are 220 calories, if 24 servings are made. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

I absolutely adore these sandwiches. I gave an entire pan to the Bardstown Fire Department as well as served them for lunch when my BFF Kathy and Mike visited from Mobile.



I began with the rolls.



I placed the bottom half of the rolls in a disposable pan.
Only 20 fit in the pan, so I used a smaller pan
for the extra rolls for me to try.



I mixed the mayo


with the hot sauce to give it a little zip.



The color makes me happy.




Once the mayo and hot sauce were mixed, 
I slathered it on the bottom of the rolls.







I placed a thin slice of London Broil roast deli beef on each roll.



All done and ready to add the cheese.



Pepper Jack is wonderful and adds so much to the sammies.



Looks great!



I then put on the tops.



I melted the butter in a small pan with the



lemon butter,


Dijon mustard, and



Worcestershire sauce.



This mixture will glaze the tops of the sandwiches.


They look great all shiny and ready to heat in the oven.

Today’s Recipe and Location: Baked Sweet Potato with Sour                                  Cream and Mint

This was so good! I love sour cream on any baked potato, but the addition of fresh mint gave it a whole different flavor.

Dog Bed #2

A very sweet lady at the Upsy Daisy donated this 
wagon to me, because she loves animals and wanted to 
help out Barktown Rescue. This was so different from 
my first dog bed. These are really fun to make.


I went with gray paint and began with some checks.


This is the pillow I made to go in the wagon.

I bordered it with green just like the stripe in the pillow. 
I decided to go with black, green and gray paint.


It's getting cuter.


I love the sides. Polka dots just make me happy!


I added a jungle ribbon as a finishing touch.


Two down and one to go.

What the Beck???

Becky's homemade Shepherd's Pie


Ingredients:
1 lb. (90/10) ground beef
1 package taco seasoning
yellow sweet corn
mashed potatoes
2 pkgs puffed pastry 

I began by browning the ground beef
in my beautiful Pioneer Woman skillet.



I added water to the browned beef.


Yes, add in the Taco Mix


I let it cook down.



I spread some flour on the countertop.



This is where I thought that I went terribly wrong.
I had a store bought Shepherd's Pie and 
it had a crust on top - so I thought I
would use puff pastry on my creation.


Salt the taco mixture.



I cut the puffed pastry into circles.
Puffed pastry is wonderful, but 
I was really worried about how it
would be when I froze it. I even told my
BFF Donna that I had made a mistake.
I was wrong - it actually was okay, but
just having the potatoes on top is less
calories so I will go that route next time.


I purchased frozen corn and thawed it  
in a very large strainer.



I added pepper...


and salt to the corn.


Now, on to the assembly line.
I began with the taco seasoned meat.



I spooned the corn atop the meat.



I cheated and made boxed potatoes,
because I was in a hurry.


This is where some store bought ones stopped.
There are some that have a crust, which I 
thought I wanted.


I did the little slits to release steam.


They look beautiful after they were cooked.
I ate one of them and I loved the crust.



I love my Shepherd's Pie,
but next time it will be crustless.
