What the Beck???
I began by heating the green enchilada sauce.
As it began heating, I added in the green chilies.
In a skillet, I cooked the onions and butter.
I only had red onions so that it what I used.
I took three tortillas and covered them with the
Cheddar-Jack. This is what Ree did, but I would
usually just do one at a time.
After the cheese was melted I spooned on some of the
green chili and enchilada sauces.
I also added some of the butter/onion mixture.
What enchilada is complete with sour cream?
The final ingredient was to add fresh cilantro leaves.

were very tasty enchiladas. I actually prefer flour tortillas, because the corn
flavor seems to overpower the rich flavors of the ingredients. These were a
quick meal and quite good.
