         These strawberries are beautiful. It is really a shame that I don’t eat them, but oh well…..I don’t. These would be great on a breakfast buffet. She decorates with both white and semisweet chocolate which makes for a better looking finished product.  When was the last time you decorated strawberries??


Trivial Triffles

         This morning I was watching a CNN clip of an interview with Robert Redford about the changes over time in The Sundance Film Festival. He was talking about an upcoming movie he was in that is entered in the festival. He recounted how he wished he and Paul Newman had made the film together because of the chemistry they shared in life that came out in the movies Butch Cassidy and the Sundance Kid and The Sting. It is such a shame that they didn’t make a third movie together. Paul Newman died in 2008 of cancer. I loved these two movies.
           


Memory Musings

         One of my early jobs after returning from Florida was working at Rich Port Realty. I obtained a secretarial position that was really fun. I worked with Realtors Sue Sisco, Cindy Pearson, Kathy Wilson, Norma Metcalf, Margaret Minalga, Dick and Shirley Newman, Sandi Wilcox, and Lee Scheidenhelm. I loved these people who always treated me with respect and shared a friendship. I hope I didn’t forget anyone. I have extremely fond memories of Rich Port and these wonderful people who influenced my life in a positive manner.

Week 58 Saturday (2/20/15)

I figured out that there are 397 calories per serving, if 7 servings are made. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

         This shrimp has a tremendous amount of flavor. I was a little worried at first because the herbs make the sauce very green which is not good for my Coumadin levels, but this is so tasty that I will space out the time that I eat it. I made seven servings, and froze them so I can enjoy one every three or four days. I would love this over rice or even just on its own.
         Ree serves this dish during Cinco de Mayo. She said the sauce comes from Argentina. I read up on it, and it is a type of pesto that is usually served on meat in that country. I just love the flavors.
         If you haven’t purchased Ree’s Holiday Book you really need to do so. This book is filled with wonderful recipes for every holiday that are just great.

Random Reflections

         I have been really bothered by the Little League World Series scandal in Chicago. Like many people from the area, I was so happy for these children. They had worked hard and had won the World Series Title, and then the truth came out in the news. The team was stripped of their title for cheating by playing children outside the allowed boundaries.
         The frustration for me was directed to the people who caused this problem. Who do we blame?  I blame everyone who knew about the problem and didn’t stop it before the game was played. I have so many questions. Did all of the coaches know? Whose job was it to check the childrens’ addresses and birth certificates?  It is hard to believe that the involved parents and children didn’t know. Kids hear almost everything said in their homes, and if this is true then those children witnessed and were taught that it was okay to lie and cheat. Great job parents! 
         I am so sick of hearing people say that, “It’s happening everywhere,” as if that makes it okay. I believe it shouldn’t happen anywhere, and that we need to raise the consequences for these infractions. Maybe if the consequence were serious enough, then it may not be worth it for the parents, coaches, and leagues to take the risk.
         I do feel heartsick for these inner-city families from low- income neighborhoods who saw a chance for their children to rise above their roots. These kids need the opportunity without breaking the rules.
         Great harm has been done. Now, the city is brushing it under the carpet, and saying they still want the kids to celebrate their accomplishments. The kids didn’t win, because the adults cheated. Explain it gently to them, but don’t tell them it is really okay. I was appalled that the kids were not immediately notified at home where the problem could be discussed in the private.
         Once again, Illinois looks so bad in the media across the nation. I am so tired of crooked politicians, and now it has spread to the world of Little League. Is there ever an end to this in the state of Illinois???

Helpful Home Hints

         I made a really dumb mistake with my snow blower.  I have a wonderfully powerful Craftsman Snow Blower that was given to me by my students about 16 years ago. I should have had in serviced in October when Sears runs a sale on maintenance, but I didn’t. Now I am thankful that I didn’t spend the money, because I literally bent the bar that changes the direction the snow flies. My car was over too far and the bar was snagged by the car and dragged. The bar was bent when it hit the side of the garage. Great job, Beck!  It still works, but every time I need to change the direction, I have to put the power in a low gear – what a pain!

         Well, here is another task that needs to be accomplished over spring break. I thought that will be the best time to get a tune up, new bar, and anything else that prepares the machine for next winter.  I guess I always have to learn the hard way. When was the last time you tuned up your snow blower?

Week 58 Friday (2/20/15)


It is now 8:30 on Friday night, and I am just now posting this entry.  I am a total mess.  Thank Heavens I can catch up this weekend, and possibly even get ahead.  Wouldn't that be wonderbar!


Recipe Review       
Today’s Recipe and Location:           Buffalo Chicken Bites

I figured out that there are 145 calories for a 4 – 5 chicken bites serving. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

         If you ever need a little kick, then this is the snack for you. These are spicy little gems that taste absolutely amazing when dipped in the Blue Cheese Dip.  They did take a little while to prepare because first you make the Dip and set it in the fridge until you are ready to serve.
         Now you cut up the chicken into bite size pieces and make the batter to coat these bites. Next comes the hard part for me – frying the chicken bites. Why do I always get burned when I fry something up?  I think I am a relatively intelligent person, but I lose all intelligence when frying. I always somehow splash the grease. Tonight it was little specks on my face and neck. I am sure I will look gorgeous tomorrow at school.           
           The final step is to coat the little fried pieces with the hot sauce. After coating you bake them for a few minutes, and they are ready to serve.  It took a little while, but it was truly worthwhile.  We’ll see what the gang thinks at school tomorrow.
      They were a big hit at school!!!


I use Market Day Chicken Breasts
because they are exactly four ounces

sauce.  Gosh, I love this sauce.
I was eating beef tenderloin for lunch,
and added this atop the beef.  HEAVEN!!!

         The glaze is absolutely amazing. Who knew that a can of Dr. Pepper could make such a difference. But why am I surprised? Ree has added a can of pop to many recipes and it does something wonderful to each and every recipe I have made. I have to admit that all recipes with pop were a big hit among the masses that I have fed.

Random Reflections        

         Let’s talk echocardiograms.  Why not?  What else do you have to do now? I have tremendous respect for Ed Spain who administers my Echo every year.  He is a true professional. I have always asked for him to perform my Echo because I believe in having the same person administer the Echo, so I have consistency. He came highly recommended to me from another amazing professional – my cardiologist Dr. William Mackin. I am so blessed to have people I trust, who have kept me in great health, even though I have a weak Mitral Valve. Ain’t life grand?



       
Irksome Ideas and Images

         One of the things that annoys me greatly is when I am cooking, and use the wrong size bowl. It is such a dumb thing to write about, but I hate it when the bowl is too small and flour goes everywhere. This is just one of those little things that irks me.

         This one is so unique. Who knew I could eat black beans and enjoy them?  This is so tasty and I love everything on top especially the avocado and dressing. This is another keeper.  Go Ree – you are on a roll.

Gabbin’ About Gratitude

         I am so grateful to the men and women who become fire and/or police officers. How can we not be thankful for someone who will run into a burning building to save our lives? How can we not be thankful for someone who will save us in a robbery or pull us from a traffic accident? My hat is off to all of you. I did write an entry about my admiration for my friends who are in these jobs. Let’s all take a moment to thank those who save our lives.


Memory Musings


         Like everything else in my life, when I set a goal, I will do whatever it takes to reach that goal. One of the things I really wanted to do was become a good server in tennis. I took many lessons over the years to improve my serve until I was pretty darn good, if I do say so myself. I loved playing tennis, and there is nothing more gratifying than serving an ace. Now the question is, “Could I serve an ace today?” I am pretty sure that I would probably throw out my back if I even tried. Oh Lord it stinks to get older. I haven’t used those back muscles in years.  Since I am not currently playing tennis, I can live with it

         OMG I love this potato. The mixture of the potato and chili and cilantro just makes me smile. This is one hearty meal for me and I loved every bite. I did freeze them separately so I can have a half or whole depending on my mood and calorie count for the day.

excellent. but the cilantro really did the trick!


Trivial Triffles
         President’s Day was a whirlwind for me. I began by running the girls to the Vet and Groomer in Sandwich. I left there, and headed straight for Delnor Hospital where I was having an Echocardiogram. I had a little time free to make my grocery list and then ran to Warrenville to get my taxes prepared. From there I went to the store to pick up a few things I need for this week’s cooking. Afterwards, I made the return journey west to pick up my sweet girls. Whew!!!! I am tired just thinking about all of the things I cram into every day off. Just imagine what life will be like when there is no real daily schedule.  Wow – that will be so amazing!

         Yesterday, the girls spent the day at the Vet/Groomer. I dropped them off at 7:30 and picked them up 3:45. So much for President’s Day off of school. It was a long day for them because they had to begin fasting the night before. Sage had nine tests and Willow seven. These were done because it is the end of the PAW Plan for the year. I wanted to get all of the tests done. You know – get my money’s worth. They also were groomed. This was just about it for both of them.  They practically pulled me to the car in a dead run.
         I took a photo of my bill because it is filled with zeros under the price column until you to get to grooming and 12 months worth of flea and heart worm prevention. The total bill for the day was $401.00. Whhhhhaaaaaaatttt?  So much for the zeros. It was my choice to buy 12 months worth because I get a $50.00 rebate when I buy in quantities of 12.

         Without the PAW Plan, the bill would have been $960.00, for a total savings of $559.00.  The most important part of the bill for me is that my girls have been thoroughly checked and are in great shape.
         Their weight is finally back to normal.  Sage weighs 19.6 lbs. and Willow 21.4 lbs. (decimals may be a little off). They are just where they should be.  I am one happy camper.  I LOVE the Sandwich Veterinary Hospital!

         I have been dreaming of this soup, and even though I haven’t remade many recipes, I had to make this one. This is my original review from somewhere around March of 2014. My thoughts haven’t changed a bit. I LOVE THIS SOUP.  It is so low in calories and the diced cooked tomatoes are not bothering me at all.  I can’t wait to savor every bite!

         I have had an aversion to tomato soup since I was a kid. As I said previously, it was one of the only things my Dad knew how to make on Saturday morning. He paired it with grilled cheese or a peanut butter and jelly sammy and that was the regular lunch on the weekends. I also developed an allergy to raw tomatoes as they made me itch. So I was worried about making this dish. 
         I am admitting that I was dead wrong.  This is not anything like the red and white labeled tomato soup of my childhood. I made it with petite diced tomatoes so that maybe it wouldn’t bother me as much if I ate a bite.
         Not only did it not bother me, but this was amazing. You just MUST try this soup.  It is restaurant level and creamy. This is definitely a first for me.


Good Lord, what is happening to my focus?

Am I going blind?
Maybe I should take more photos to avoid this problem.

When servings are only one cup as mine are,
you get a heck of a lot of them.
I froze most of them, so I can enjoy them

         I just purchased additional organizing containers, which made me so happy.  I really think that I could write a book on the subject. There are so many experts that it probably wouln’t be published, but it might be fun to try.

Wants and Wishes

         I really want to end this year on the highest note. The kids and I are working hard to prepare them for middle school. I want them to feel secure in their knowledge and anxious to begin the middle school experience. I m looking forward to each coming day, and want to make school the best ever.
