Week 62 Sunday (3/22/15)




Recipe Review

I figured out that there are 167 calories per serving, if 12 servings are made. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

         If you are a fan of Rice Krispies treats, then this is a recipe for you. They only take a few minutes to make, and they would be cute on an Easter table. Ree added multiple colored sprinkles, but I only used red and pink. I took 11 over to the Serpicos and the results were:  3 out of 3 ate them in a minute or two. They liked the surprise on the inside, too.



I began by getting out all of my ingredients

Melt the butter



Add in the marshmallows and melt'em


Remove from the heat and
add in the Rice Krispies


Use a plastic egg and fill each half after
sticking a jelly bean surprise in the middle
Remove it quickly

Trivial Triffles

         Yesterday, I was watching the extreme couponing show on T.V.  I used to be an extreme couponer and loved it. I saved a lot of money. I just wanted to reach 90% or more, and when I did, I stopped.  I set this goal and I am extremely driven to achieve all of my goals. Watching that show made me want to do it again, IF they have double coupon stores in Kentucky, then it would be so much fun to see how many grocieries I could get for over 90% free.  Oh to dream……



Memory Musings

         Denise McKeon was a student at ECC that I met in 1981. She was a foreign exchange student from Sydney Australia. Denise was so much fun. She wanted to experience everything she could in America that was different from her homeland. For instance, eight girls decided to go camping at Devil’s Lake in Wisconsin. Of course, none of us were campers, and we didn’t know that it was the first day of deer hunting season. So, basically it was eight girls and the rest were men who all seemed to have a dead deer hanging out of the back of their trucks.         
         Denise was in charge of bringing our dinner. She brought spaghetti.  Who brings spaghetti on a camping trip? We drove in vans, so it isn’t like we had supplies.  Denise came up with the great plan of asking the men in the next site if we could borrow a burning stick to start our fire. It was hysterical, but it worked.  We used “clean” snow and boiled up our spaghetti.  It was freezing that night, so my van left at 2 a.m. and the other followed an hour later.  It was a fun adventure, and one I will never forget.
         Another Denise adventure was going Trick or Treating. I guess I thought this event was held in Australia, but I was wrong. So five college girls decided to go out. We dressed up and everything.  What we weren’t ready for was the reception from the people.  They were actually hostile, until we explained,  why college students were in the neighborhood. One house suggested that we change our motive, and go trick or drinking to houses where we knew the people.  The owner gave us all shot glasses, and we continued on our way.  It was much more fun with our shot glasses.

         Once again, I selected a recipe for you that has strawberries (so I don’t have to make it).  I thought the ice cream would be pink, but it was pretty white with red flecks. It looked so refreshing that I actually got up and checked my freezer.  It was a sad moment when I discovered that there was no ice cream anywhere.  Oh well – there is always tomorrow and my trip to Walmart.
        

Random Reflections

         I have discovered a new store. I was in Sandwich picking up dog food today, and was told to go to Rural King. This is a wonderful store similar to Farm and Fleet.  Because I will be working on a dairy farm over break, I needed to purchase Muck Boots. Not only did I find these, but really cute colored Croc-like shoes, and yard ornaments.  Did you know that you can buy spices there for about 79 cents.  Holy Moly – I had a field day. I even found a really cute skirt and biscuits cutters.  Okay, those two didn’t go together, but I was darn excited about this trip.  These boots are not beautiful, but will definitely fit the bill for a day on the farm.

Helpful Home Hints

         Have you walked around your house lately and inspected the home for winter damage?  I walked the house this week and noticed one of the gutters had been damaged during the roofing, and it was made worse when the ice built up in the gutter.  The ice forced the gutter further away from the house. I contacted the roofer, and they are coming back to repair it.  I am also in search of the roll-out that you attach to a downspout. It is a rolled up tube that helps divert water away from the house. In my case, I need to divert the water into the yard. The water is rushing down the flowerbed and carrying the mulch down the hill. If I can find this rollup, I will save my flowerbeds from destruction. This is the time of year where I can’t wait to begin working in the yard.  Let the sun shine!

         I love, love, love these smores. Who knew that I could make smores in just a few minutes in my kitchen?  I have become a big fan of Nutella. I never liked hazelnuts, but this is a whole other thing. The hazelnuts were always left over in the dish, yet I could eat Nutella right out of the jar. OMG these smores are fabuloso!

Fabulous “Family and Friends” Food

Quesadillas
No name on this recipe card

Ingredients:
3 (12 inch) flour tortillas
1 can (10 oz.) hot enchilada sauce
½ cup (2 oz.) shredded extra sharp cheddar cheese
½ cup (2 oz.) shredded Monterey Jack cheese

Directions:
         Put tortillas on a large cookie sheet.  Preheat oven to 400 degrees.
         Brush a thin layer of sauce on each tortilla. Sprinkle each with the cheeses, dividing evenly among the three. Drizzle some of the sauce over the cheese.

         Bake in a preheated hot oven (400 degrees) for 3 minutes or until cheese is bubbly and tortillas are crisp. Cut into irregular corners. Serve at once with cold drinks.

         These yummy delights are so quick and easy to make and would make a sweet lover smile. They are made as quickly as you can microwave and melt the melting candies. I decorated them with a variety of sprinkles. They are so good, but more importantly can be created in less than 15 minutes, including clean-up!

Random Reflections


          It is Wednesday night, and I am preparing for tomorrow’s blog. I have been watching Diane Sawyer and The Sound of Music.  This movie has been extremely important in my family’s history. I saw the movie seven times with my Mom. She fell in love with the movie right at the onset. To this day, I can sing every word of every song. My sisters and I used to sing together, and these were the songs were sang.
         Tears ran down my face as the song Edelweiss came on the air. This was a song we sang for my Dad, because he loved it. Every time I hear or sing that song, I think of him. The show dispelled some myths about the movie, and Diane Sawyer did an excellent job. What a wonderful night full of wonderful, happy memories!


Irksome Ideas and Images

         I was in the Walmart parking lot yesterday, and it is so irritating when people park over the line in a parking lot. Are they in a hurry?  Do they not know how to park in a diagonal space? Are they just jerks?  Do they even care??? Maybe we should insist on a refresher course in driver’s ed. every 10 years.

         OMG – I am in love with Nutella!  Once again, Ree uses it in a great way. Everyone I know loves strawberries (except me). I can’t imagine anyone not loving chocolate, so to create a layer cake using both seems logical to me. This cake is so beautiful!  I was trying to think of a substitution for myself and all I came up with was bananas.  How do you put them on the outside and not have them turn brown and ugly???? I would love the taste of bananas and chocolate so maybe I have to make the cake, add the whipped cream on top and then slice in the bananas as I serve it.  That sounded great to me!

      
Gabbin’ About Gratitude

         After a long winter, I am so thankful for the sunshine. Of course, Spring is known for its rain storms, but know that the sunshine follows the rain.  I love to sit in the front window and soak up the wonderful Vitamin D.  Thank you God for the blessings of the sun!


Memory Musings

         Over the years, I attended eight different colleges and universities. When I was looking through my old calendars I came across my 1981 ECC course list. I took PE Concepts, Psychology, English 1 & Speech, Math, Art and Music in the classroom. I remember loving my Psychology class, as well as my Art and Music in the Classroom course. In fact it was that class at ECC that is responsible for my choice in selecting a career in the world of education.

         This is a really pretty parfait that would be a great addition to any breakfast or brunch. Serving this in individual wine glasses would make it seem really decadent. It would also make for a light dessert. I think that this could be really fun for kids to put together. 


      
Craft Corner

         Thanks to the generosity of the parents at my school, I now have this wonderful pile of jeans ready to be cut into squares for quilts and jean purses. Denim fabric is so expensive, and I love that the parents gave these to me for free.  I am so thankful that people are so willing to help when asked.

         Friday night we made a visit to the Sandwich Veterinary Clinic to get the final tests and checkups from our Paw Plans Insurance. Willow is very unhappy there, so she frequently hides underneath the bench. Sage comes and goes, but is less scared. 
         We also signed up for another year’s Paw Plan, so that I know my girls are covered, and that most of the teeth cleaning is covered for the year.

I figured out that there are 726 calories per serving, if 4 servings or 484 calories for 6 servings, or 363 calories for 8 servings are made. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

       My entire house was filled with the smell of roasted garlic after cooking these wonderful potatoes.  They were so amazing that I enjoyed every little bite. The garlic was partially crunchy and brought so much flavor to these potatoes.  Of course, the whole milk and cream cheese didn’t hurt.  I don’t ever want to eat mashed potatoes again that do not include cream cheese!  These are a definite keeper.


The first step is to roast the garlic in the oven


Just quickly peel the potatoes

Boil up the taters!
Wow! Look at all of that starch


Pour them into a large bowl

Add the butter and salt and pepper




Just put dabs of cream cheese
all over the potatoes




Now mix well and add in the
amazing roasted garlic.


There is nothing better than yummy
potatoes in the freezer ready to eat

Random Reflections - Bucket List #50

It would be really fun to host a family brunch or luncheon just for the heck of it.  Anyone who can attend is invited. Maybe it should be a “I am retired” luncheon. This is something fun and easy to accomplish – that’s the ticket!

Wants and Wishes

     What I really want right now is a week off for Spring Break. There is nothing better when the weather starts to change than a week of vacation. It is amazing to me how quickly the year is going right now. I have less than 60 days left of school forever. That is such a foreign concept to me, but one I welcome. Spring Break is a time to rejuvenate before the final push. It just can’t come quickly enough for this girl.
